Vegan author Justin Kaye shares his vegan chickpea wrap recipe from his latest Plant Based Recipe Cookbook.

Chickpea and paprika

Here’s what you’ll need for 2 servings:

  • 4 Cups of Romaine Lettuce
  • 1 Avocado
  • 1/2 Cup of Salsa
  • 1/2 Cup of Shredded Mexican Cheese
  • 2 Tbsp of Sour Cream

Seasonings

  • 1 Tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Cayenne Powder

Here’s what to do:

  1. Wash and drain the chickpeas. Put them in a big bowl and mash them with a fork.
  2. Chop the celery and red onion into small pieces and add them to the chickpeas. Then go ahead and mix in the remaining ingredients.
  3. Divide the mixture into two separate wraps
