Vegan Tofu Scramble on Whole Wheat Toast
Here’s what you’ll need:
- 4oz of Tofu
- 1/2 Cup of Red Bell Pepper
- 1 Cup of Spinach
- 1/4 Cup of Red Onion
- 1/4 Cup of Chopped Tomato
- 1 Tbsp of Coconut Aminos
- 1 tsp of Coconut Oil
- 1 tsp of Turmeric
- 1/2 tsp of Sea Salt
- Pinch of Black Pepper
- 2 Slices of Whole Wheat Toast
Here’s what to do:
- Place a pan on medium heat and add the onions, tomatoes, and peppers with the coconut oil.
- Once the vegetables become translucent add the tofu to the pan and roughly break it down with a spatula.
- Add the coconut Aminos, turmeric, salt, and pepper and cook for another 5 minutes.
- Only add the spinach in the last 2 minutes so that it doesn’t wilt too much.
