You may notice that many restaurants have added bowls to their menu. A few short years ago the only meal you could get in a bowl was soup, oatmeal, or grits. Nowadays getting solid food in a bowl is trendy in the US.
The goal of the “bowl” dish is to get all the nutrients in a bowl piled in layers. Think, layers of flavor. If you haven’t tried it give it a go next time you are at a restaurant that serves meals in a bowl.
Here’s a quick easy vegan breakfast recipe for quinoa apple peanut butter bowl from the author of Plant Based Recipe Cookbook, Justin Kaye.
Here’s what you’ll need:
1 Cup of uncooked quinoa
1/4 Cup unsweetened soy milk
1/2 Tbsp of cinnamon
1/2 Tbsp of chia seeds
2 Tbsp of organic peanut butter
1/2 cup of unsweetened almond milk
1/2 Cup of raw almond milk
5 Drops of liquid stevia
This recipe is for one serving, please adjust the ingredients accordingly if you are making it for your family.
Here’s what to do:
- In a saucepan bring to a boil, soy milk, quinoa, and cinnamon.
- Reduce heat and simmer for 10 minutes.
- Remove from heat and stir in chia seeds.
- Cover the saucepan with a lid and place aside for 10 minutes.
- In the meantime, microwave peanut butter and almond milk for 15 seconds on high.
- Remove and stir until runny.
- Stir in cocoa powder and stevia.
- To serve fluff the quinoa with a fork and place it into a bowl.
- Top with a sliced apple.
