Justin Kaye is back with one of my favorite recipes, creamy avocado pasta. People, vegan or vegetarian eating does not have to be boring. Avocado is a superfood on its own, it’s rich in healthy fat. Garlic is great for digestion, pair that with lemon juice and your gut will thank you! I usually use red pepper flakes but you can use black pepper, depending on your taste preference.
Here’s what you’ll need:
4 oz of Brown Rice Linguini
1 Avocado
1/2 Cup of Fresh Basil
2 Tbsp of Extra Virgin Olive Oil
2 Cloves of Garlic
1 Tbsp of Lemon Juice
Pinch of Sea Salt and Pepper
Here’s what to do:
- Start by preparing the pasta according to the directions on the packaging. While the pasta is
cooking start preparing the avocado cream sauce by combining all of the ingredients in a food
processor. - Process until the consistency is nice and smooth.
- Add the avocado cream sauce to the noodles once they are ready. Feel free to add to favorite vegetarian protein source to this dish if you prefer a meal with higher protein.
