Creamy Avocado Pasta Recipe

Justin Kaye is back with one of my favorite recipes, creamy avocado pasta. People, vegan or vegetarian eating does not have to be boring. Avocado is a superfood on its own, it’s rich in healthy fat. Garlic is great for digestion, pair that with lemon juice and your gut will thank you! I usually use red pepper flakes but you can use black pepper, depending on your taste preference.

Here’s what you’ll need:

4 oz of Brown Rice Linguini
1 Avocado
1/2 Cup of Fresh Basil
2 Tbsp of Extra Virgin Olive Oil
2 Cloves of Garlic
1 Tbsp of Lemon Juice
Pinch of Sea Salt and Pepper

Here’s what to do:

  1. Start by preparing the pasta according to the directions on the packaging. While the pasta is
    cooking start preparing the avocado cream sauce by combining all of the ingredients in a food
    processor.
  2. Process until the consistency is nice and smooth.
  3. Add the avocado cream sauce to the noodles once they are ready. Feel free to add to favorite vegetarian protein source to this dish if you prefer a meal with higher protein.
